Instant Pot Shredded Mexican Beef step by step

  1. In a small bowl, combine salt, pepper, chili powder, cumin, and garlic powder to form seasoning blend.
  2. Cut roast in half, season on all sides.
  3. Add oil to IP, turn on saute mode. Saute beef on all side, 4-5 min. per side. Turn off saute mode.
  4. Add tomato sauce, chipotle peppers and adobo sauce, green chiles, beef broth, cilantro, and lime juice and zest. Turn on high pressure mode for 70 minutes, natural pressure release.
  5. Shred beef with two forks, and add hominy. Cook on saute mode for an additional 10-15 minutes.
  6. Serve with additional cilantro, corn tortillas, queso and crema.
