  1. Heat olive oil in a large pot, add in eggplants and cook for a minute.
  2. Add in diced tomato with juice, tomato paste, black beans, and taco seasoning. Bring to boil..

  4. Simmer with lid on for 10 minutes or when the pasta is cooked to your liking.
